
Ingredients
* 175 g butter
* 1/4 cup icing sugar
* 3 drops vanilla essence (few drops)
* 1 1/2 cups flour
* 1/4 cup custard powder
Butter Filling
* 50 g butter, softened
* 1/2 cup icing sugar
* 2 tablespoons custard powder
Directions
1. pre heat oven to 180 degrees C.
2. cream butter and icing sugar until light and fluffy.
3. add essence.
4. sift flour and custard powder together, fold into creamed mixture.
5. roll teaspoonfuls of mixture into balls.
6. place on oven tray, gently flatten with a floured fork
7. bake for 15-20 minutes.
8. when cold sandwich together in pairs with butter filling.
to make butter filling:.
9. beat all ingredients until well combined.
Okay, okay, I know these arn't cupcakes but I have just made a batch of these and they are nearly gone already - so simple to made and they look so impressive. These are delicious! My kids love them (well so do I) lucky I have a half marathon on the weekend so I can run off all that butter.
NB: To add a delicious little twist to these add the juice of a 1/2 a lemon (about 2 tablespoons and an extra 2 tablespoons of icing sugar) and a teaspoon of lemon rind to the icing - Yummmmmmm!
